Quinoa Black Bean Burger

Quinoa Black Bean Burger

Ingredients:

½ cup quinoa, rinsed
1 tsp olive oil
1 yellow onion, diced
2 cloves garlic, minced
1 15 oz can black beans, drained and rinsed
2/3 cup cooked corn
1 large egg
¼ cup chopped cilantro
2 tsps ground cumin
Salt, to taste
¾ cup rolled oats, ground into crumbs
8 hamburger buns

Instructions:

In a medium pot, bring 1 cup of water and the ½ cup quinoa to a boil. Reduce heat to low, cover and simmer for 15 minutes. Remove from heat.

In a medium sauté pan, heat olive oil over medium heat. Add the onions and cook for 5 minutes. Add the garlic and cook for one additional minute. Place mixture in a large bowl.

Add 1 cup of beans and ¾ cup cooked quinoa to the bowl and use a potato masher to mash all the ingredients into a paste. Add the remaining beans and quinoa, corn, egg, cilantro, cumin, salt and oats and stir until fully combined. Refrigerate overnight.

Preheat the oven to 375 degrees Fahrenheit.

Form the mixture into equal patties, about 3-4 inches wide and place on a baking sheet generously coated with non-stick spray. Bake for 20 minutes, until golden and crispy on top. Flip the patties over and bake an additional 15 minutes. Serve on hamburger buns with your favorite toppings like avocado, lettuce, tomato and hummus.
