Pork Banh Mi Sandwiches

Ingredients:

1 ½ pound pork tenderloin, trimmed
4 6-inch soft baguettes, sliced lengthwise
1 tbsp olive oil
½ tsp salt
½ tsp pepper
1 tsp five-spice powder
¼ cup cilantro leaves
1 small cucumber, peeled, thinly sliced
¼ cup jalapenos, thinly sliced
¼ cup mayonnaise

Pickled carrots & radishes:

¼ cup carrots, julienned
¼ cup daikon radish, julienned
¼ cup rice wine vinegar
2 tsp sugar

Instructions:

Preheat oven to 400 degrees Fahrenheit. In a medium bowl, combine vinegar and sugar, and mix until sugar is dissolved. Add the carrots and radishes and toss to coat with vinegar mixture. Cover and set aside.

Place pork loin on an oiled baking sheet and brush outside with olive oil. Using your hands, rub the tenderloin with salt, pepper and five spice powder. Bake for 30 minutes or until internal temperature of pork is 145 degrees Fahrenheit. Let rest for 10 minutes, then cut into thin slices.

Set oven to broil. Place baguettes crust side up on an ungreased cookie sheet and broil for 2 minutes.

Spread desired amount of mayonnaise on the individual baguettes and then layer the sliced pork, cilantro, cucumber, jalapenos and pickled carrots and radishes on the sandwich. Serve immediately.
