Ingredients:
4 medium peaches, halved, pits removed
1 cup balsamic vinegar
½ cup goat cheese
Canola oil, for brushing
Instructions:
Add balsamic vinegar to a small saucepan and place over medium heat. Allow vinegar to boil and start to reduce down. Remove from burner once vinegar has reduced to half.
In meantime, heat a gas grill to medium heat. Brush the peaches on the surfaces with canola oil. Place the peaches skin side down on the grill and let cook for 10 minutes. Flip peaches after 10minutes to other side, then remove once nice and caramelized.
Serve peaches individually with balsamic drizzle and chunks of goat cheese.
