Ingredients:
2 lbs skirt steak, cut into strips
1 Tbsp olive oil
1 large white onion, thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 clove garlic, minced
4 large sub rolls, cut in half
½ cup goat cheese, crumbled
Instructions:
Preheat oven to 400 degrees Fahrenheit.
In a large sauté pan, heat oil over medium-high heat. Cook the onions and bell pepper about 10 minutes or until caramelized. Add the garlic and cook for one additional minute. Transfer to a bowl and set aside.
In the same sauté pan, add the skirt steak, season with salt and pepper and cook until the meat is no longer pink, about 3 to 5 minutes. Add the onions and bell pepper back to the pan, quickly stir and remove from heat.
Arrange the rolls on a baking sheet, spoon the meat mixture onto each roll, sprinkle with goat cheese and bake until the bread is toasted and cheese melted, about 5 minutes. Serve immediately.
