This recipe offers a variety of flavors to enjoy, needing a balanced wine to complement its complexity. A glass of Pinot Noir is a versatile and delicious accompaniment.

Ingredients:

10 brown figs
1 large baguette sliced in to 1 inch slices
8 large shallots, finely chopped
1 garlic clove, finely chopped
½ pound of thinly sliced prosciutto
⅓ pound of goat cheese
Balsamic vinegar to taste
Olive oil

Instructions:

Bring grill or grill pan to high heat. Remove fig stems and slice in to halves.

Lightly oil grill and place the figs face down for 1-2 minutes until figs are soft. Flip over and continue to cook for another minute. Remove to plate.

Sautee shallots over medium heat with olive oil and salt as they start to brown, add a sprinkle of water to caramelize the shallots. Cook for a total of 7 minutes until they are a rich caramel color.

Lightly coat bread with olive oil and broil on a baking sheet to toast. While the toast is still warm, rub one side with garlic.

Place a spoonful of sautéed shallots over the toast. Top with a thin slice of goat cheese, prosciutto and grilled fig. Drizzle Balsamic vinegar for taste.
