Wine Reduction Toppings for National Cheesecake Day!
Every day is a good day to celebrate cheesecake, but the official National Cheesecake Day is July 30th—just in time to put the fresh fruits of the season to good use. Whether you’re ending the perfect summer meal or inviting friends over just for dessert, try one of these fruit-and-wine reductions for the perfect cheesecake topper. Or try all three and let your guests choose their favorite!
Ingredients:
1 cup red wine (like Pinot Noir or Malbec)
1 cup fresh fruit of your choice (cubed strawberries, halved cherries, or blueberries)
½ cup white sugar
½ tsp ground cloves
½ tsp cinnamon
1 Tbsp cornstarch, if necessary
Instructions:
Mix ingredients in a shallow sauce pan
Simmer for 30 minutes, stirring, until sauce begins to thicken and reduce. Add cornstarch to help thicken the sauce if fruit is especially juicy.
Spoon atop fresh wedges of cheesecake and serve!
