Ingredients:
2 cups water
1 cup long-grain white rice
1 teaspoon canola oil
2 tablespoons fresh lime juice
½ cup chopped cilantro
Salt, to taste
Instructions:
Bring water to a boil, add the canola oil and rice to the water. Reduce heat to low, cover and simmer until the rice is tender.
Stir in the lime zest, lime juice, and cilantro then season with salt just before serving.
