Ingredients:
1 head cauliflower, cut into florets
1 tbsp cream cheese
3 tbsp milk
2 tbsp unsalted butter
¼ tsp garlic powder
1 tsp salt, plus more to taste
¼ cup Parmesan cheese, grated
Chives, chopped for garnish
Instructions:
In a medium pot, bring 1 cup water to a simmer. Add cauliflower, cover and cook over medium heat 10-15 minutes.
Drain cauliflower and place on a paper towel. Pat dry to remove excess water. Transfer to a bowl and add cream cheese, milk, butter, garlic powder, salt and cheese. Use a potato masher to combine well. Add additional ingredients to taste and depending on desired consistency.
