BBQ Chicken Pizza

Ingredients:

½ lb prepared pizza dough
½ lb boneless, skinless chicken breast
Olive oil
5 tbsp barbecue sauce, divided
Salt and freshly ground pepper
½ cup grated smoked gouda cheese
1 cup grated mozzarella cheese
1 small red onion, thinly sliced
Fresh chopped cilantro, for serving

Instructions:

Preheat oven to 375 degrees Fahrenheit.

Place the pizza dough in a large bowl and drizzle with olive oil and roll to coat all sides. Cover with plastic wrap and set in a warm place for 30 minutes.

In the meantime, in a large bowl, combine 2 tablespoons barbecue sauce, 1 teaspoon olive oil, salt and pepper and stir to combine. Add chicken breast and coat thoroughly with sauce. Bake chicken on an oiled baking sheet for approximately 20 minutes, or until cooked through. Remove the chicken from the oven, allow to cool for 10 minutes. In a large bowl, shred the chicken using two forks.

Adjust oven to 425 degrees Fahrenheit and preheat pizza stone or a baking sheet for 10 to 15 minutes.

Transfer the pizza dough to a piece of parchment paper drizzled with olive oil. Roll out the dough to a 10-inch round and lightly drizzle with additional olive oil. Spread the remaining 3 tablespoons barbecue sauce on dough. Top with chicken, cheeses, and onion, leaving a one inch border for the crust. Slide the pizza onto pre-heated pizza stone and bake until golden brown, approximately 25 minutes.

Sprinkle with cilantro and serve.
