Mushroom Stroganoff

Mushroom Stroganoff

Ingredients:

16oz cremini mushrooms, sliced
8oz package egg noodles
1 Tbsp olive oil
1 onion, finely diced
2 cloves garlic, minced
3 Tbsp flour
Salt and pepper, to taste
2½ cups vegetable stock
2 Tbsp fresh parsley, chopped, plus more for garnish 2 Tbsp fresh thyme, chopped
½ cup sour cream

Instructions:

Cook noodles according to package directions, in lightly salted water. Drain and set aside.

Heat oil in a skillet over medium-high heat and cook onion until translucent. Add mushrooms and cook until they are golden brown, about 5 minutes. Add garlic, flour, salt and pepper, mix well and cook for 1 minute. Pour in stock, parsley and thyme, stir to fully combine and bring to a boil for 5 minutes.

Remove the pan from heat and stir in sour cream. Serve over egg noodles, garnished with an additional sprinkle of parsley.
