Ingredients:
4 slices rye bread
1 tbsp butter
1 avocado, sliced
⅓ cup goat cheese
⅓ cup spinach
Instructions:
Spread the butter onto one side of each slice of bread. Spread goat cheese on the opposite side of each slice of bread. Top two pieces with spinach and avocado and sandwich the remaining two slices of bread on top.
Toast on a hot skillet until golden brown, flipping halfway through. Serve hot.
