Citrus Marinated Chicken

Citrus Marinated Chicken

Ingredients:

2 lbs chicken drumsticks
1 orange, cut into wedges
1 small red onion, diced
Fresh parsley, for garnish
Marinade:
1 orange, zest and juice
1 lemon, zest and juice
2 limes, zest and juice
2 Tbsp honey
2 Tbsp olive oil
1 clove garlic, minced
½ Tbsp salt

Instructions:

Preheat oven to 400 degrees Fahrenheit.

Combine all marinade ingredients in a large bowl and stir until fully combined. Place chicken in a large resealable plastic bag and pour in marinade. Seal the bag and roll to fully coat the chicken. Put bag in the refrigerator to marinate for 30 minutes or up to 2 hours.

Remove chicken from marinade and arrange on a large rimmed baking sheet with orange wedges and onion. Bake for 30 to 45 minutes, or until cooked through. Garnish with parsley and serve.
